Meet the Team - Allan Lamb, Head Chef

 

This week we feature Head Chef, Allan Lamb.   Allan has worked with the Club for the past decade, and is responsible for producing delicious dishes for Members and visitors to enjoy all year round.

Allan, thanks for taking time out to talk to us today, can you tell us about your team in the Members’ Clubhouse?

There are seven of us in the kitchen here in the Members Clubhouse, ranging from Head Chef to Kitchen Porter.  The team is very important to the success of the food we produce, and I’m lucky to have a very talented, well skilled team.  Working over seven days a week we cater for a wide variety of functions and events, and, of course, for the everyday golfer too. 

What goes into producing the delicious food you provide?

We use fresh, local produce wherever possible to create our dishes, for example; fish delivered fresh from Musselburgh, local meat from East Lothian and dairy products supplied by Grahams.  The talented Chefs in the kitchen add the finishing touch!

Tell us about the variety of events you cater for in the Clubhouse.

This ranges from everyday golfers fare such as fish and chips, to creating buffets and special menus for Members functions and fine dining for up to 100 people.  Our remit is to cater for Members’ requirements.

What’s the most important part of your job?

Making sure the Members are happy with the quality of food provided.

You change the menu regularly, how do you keep up to date with trends, changing tastes and popular themes?

I like to use seasonal food and get inspiration for dishes when going out and seeing what others are doing in the area.   Members will ask me about food and their input is always good.  In terms of the trend towards plant based foods at the moment, we like to ensure we cater for all tastes and dietary requirements.

Which Chef inspires you most?

Gordon Ramsay for his skill in the kitchen - plus, he’s a fellow Rangers supporter!

What’s your favourite thing about Gullane Golf Club?

We have a great team here within the Members’ Clubhouse who I enjoy working with.

Which is your favourite course?  No.1, 2 or 3? 

As a fair-weather golfer, I enjoy an occasional play on Course No.1.  It’s the course I find I lose least golf balls on!
